A tomato omelette or the Gram Flour Pancakes in hindi are called Besan Cheela. It is a breakfast dish. When I need a change from my regular parathas I opt for these omelettes, which are healthy and at the same time very mouth-watering. It is called on omelette just because it looks like one, but it does not contain any egg.

For making the batter you would need the base ingredient that is the gram flour or besan, with some chopped finely chopped onions, tomatoes, green chillied, coriander with some of our Indian spices.

I used a non stick pan so I applied oil just before pouring the batter on the pan. If you are not using a non stick pan, then you would need to apply oil on both the sides of the omelette so that it would come off easily and would not stick to the pan. Also adding some oil would make the omelette crisp.

If you are making the batter to use immediately then make it of a pouring consistency else keep it a bit thick because the onions and tomatoes would make it a bit thin. 






Ingredients: (Makes 4)

1 cup Gram Flour (chickpea flour / besan)

1 Onion (finely chopped)

1 Tomato (finely chopped)

2 Green Chillies (finely chopped)

Some Coriander leaves (finely chopped)

1 tsp Turmeric powder

1 tsp Red Chilli powder

1 tbsp Garam Masala powder

3/4 cup Water

Salt

Oil for frying

Method:

In a bowl take all the ingredients except water and mix well.

Then add water in parts and form a mixture of pouring consistency, which is a medium consistency not very thick or not very runny.

Heat a pan.



Put 2 tbsp of oil and pour the batter on it with the help of a ladle.

Spread lightly with the back of the ladle to give it a circular shape.

Cover and cook for a minute.

Remove the lid, by the time the lower side would have turned brown n crisp. Flip the omelette (can also apply some oil before flipping) and cook the other side.

Both the sides should be evenly cooked and crisp.

When both the sides turn brown and crisp top it with butter and serve hot.

Tips:

Cook on medium to low flame.

While pouring the batter on the pan, the flame should be low.

It is a medium spice recipe, you can adjust it according to your taste by adding or cut down on chilies.

You can add or reduce on water as per required to attain the required consistency. For the amount of gram flour I had taken ¾ cup was adequate.

The omelette should be evenly cooked inside out.

Add water in parts. Gram flour easily forms lumps so mix well as there should be no lumps




Now how do I serve it? I apply butter on the whole omeletts then spread some mint chutney on it and fold it into half. It goes well with buttered bread with some tomato sauce and a cup of hot tea.

Onion Paratha in english would be called as Spiced Onion Flatbread. It is very easy to make with simple ingredients. Even does not require any prior preparation. Unlike my previous paratha recipes of Aloo Paratha (Potato Flatbread) and Gobi Paratha (Cauliflower flatbread) onion paratha is not the stuffed type. We would knead the onions in the dough. No need of preparing a separate stuffing.

Sometimes, when I have nothing to make for our meals, or when I am running late, at that time the onion paratha acts as a saviour, as onions are always there in our kitchen and could be made in no time. Or even when there are unexpected guests, make this onion paratha and you could serve it in breakfast with curd, or even in lunch and dinner with any dal or sabzi.

Ingredients:

1 cup Wheat flour

2 Green Chillies (finely chopped)

1 tsp Carom Seeds (Ajwain)

1/4 tsp Red Chilli powder

1 tsp Punjabi Garam Masala powder

1 tbsp Coriander (chopped)

3/4 cup Water

Salt to taste



Method:

In a bowl mix wheat flour, green chillies, carom seeds(ajwain), red chilli pwd, garam masala powder, salt and coriander.

Add water in parts and knead the dough.

Cover with a moist cloth and let it rest for 15 minutes.

After 15 minutes again knead the dough once again to make it smooth. Divide it into five equal portions and make balls of it.

Heat a skillet (tawa) on medium flame.

Take one ball, apply some flour and flatten it.

Roll it into a circle and apply ghee on it.

Fold the opposite sides and overlap them.

Now fold the other two sides and form a square.

Roll it maintaining the square shape.

Now the skillet would be hot enough so place the paratha on it.

Cook on medium heat. When bubbles appear on the paratha flip it.

Apply ghee on it and flip it.

Now press gently with a spatula and cook till the bottom side becomes brown. Flip it, apply ghee and cook the other side till brown.

Serve hot with curd for breakfast and any dal and sabzi for lunch/ dinner.

Tips: 

Cook on medium heat.

Chop the onions very fine to make it easier to roll.

Its a very simple recipe to make hash browns which are very crisp on the outside and soft inside. Firstly, let us know what exactly hash brown refers to. According to wikipedia, Hash browns are a simple preparation in which potatoes are pan-fried after being shredded, diced, julienned or riced. Hash browns are the staple breakfast food in North America and the UK. In some countries Hash Browns are made with fully cooked potatoes, whereas in others they are parboiled or even used raw. 


How to make Hash Browns

I always like to keep my recipe simple and easy, so, I make these hash browns using raw potatoes. For making the hash browns, all you need are potatoes. Yes, but the potatoes have to be non starchy. Now, how would you know that the potatoes are non starchy. The non starchy potatoes are the ones with a thin skin. Do not go for the old potatoes as they have more starch in them. Also, the non starchy potatoes can hold their shape whereas the others cannot, so it is important that you use the non starchy potatoes.

Now, lets begin with the recipe, and first the ingredients.

Ingredients:

4 medium sized Potatoes

1 Tbsp Butter

Salt and Pepper to Taste



Method:

Peel the potatoes and wash them. Pat dry them with a kitchen towel.

Grate them with a grater. Squeeze out the water from the potatoes by pressing them with your hands.

Now, add salt and pepper to taste. Remember we are using salted butter for frying so add in salt accordingly.

Heat butter in a pan. Take a small portion of the grated potatoes and give it the shape you want, I prefer round, so I have made it round. You can also apply oil to your hands before shaping the grated potatoes. Put it in the pan and press it gently with a spatula. Let it cook on medium flame. It will take time as the potatoes are non starchy. And hence would be crisp on the outer surface.

Flip it once the bottom has turned nice golden brown. And similarly cook the other side. And your hash browns are ready.

You can make it for your breakfast or even pack it in the tiffin for kids. It goes best with omelette and tomato ketchup. 


Tips:

Cook it on medium flame. As the high flame would turn your hash browns black.

Squeeze out the water completely. As the water would not let the hash brown strands to be intact and hence will not retain its shape and would break.

If you are using salted butter for frying add less salt in the potato mix.
