Dalia also known as Bulgar/ Cracked wheat / Broken Wheat. Its not a refined wheat and so very nutritious and highly rich in protein and fibre. Today I am going to share a recipe of Dalia Kheer which my 4 year old son loves having for breakfast. To make it more healthier for him I also add some powdered almonds to it. I do this because my son does not like almond pieces coming in his mouth.

Almonds contain lots of healthy fats, fibre, protein and vitamin E. So our today's recipe is a combination of all healthy ingredients. And yes, not to forget I make dalia almond kheer in pure desi ghee.

There are various types of dalia available in market depending upon the size of its grannules. I use the kesari dalia (smallest grannules). Its just because my son loves it. You can use any of its variety.

So let us begin with the Ingredients first:

1/4 cup Dalia

1/2 litre Milk

2 tbsp Sugar

2 tbsp Powdered Almonds

2 tbsp Pure Desi Ghee

1 Cup Water



Method:

Heat 2 tbsp desi ghee in a pan. Then add the 1/4 cup of dalia to it. Mix well.

Stir continuously and cook on medium flame till it turns light brown.

Then add 1/2 cup of water to it followed by the powdered almonds. Stir well.

Let it simmer till the water is soaked by the dalia.

Then add milk to it.

Let it cook on medium flame till you get the desired consistency.

Garnish with almonds and serve hot.



Do make this nutritious Dalia Almond Kheer for your kids and they are going to love it for sure. My son started having it since he turned one and is still very fond of this Dalia Almond Kheer.

I had some bananas kept in the fruit basket, sad and looking for something to be a part of. A couple of times, I requested my son and hubby to have it, but they straight away refused as the bananas were very ripe and hence they were again sent back to the basket. But today there was no choice but I had to use it, else it would have been wasted, which I am very against of. So, I thought of baking something with it. Finally I decided why not go for muffins with chocolate flavour. Muffins are very easy to make yet very delicious and loved by all. 

So as always to begin with the recipe lets have a look at the ingredients first and then the method.

INGREDIENTS:

3 ripe bananas

1 1/2 cup All Purpose Flour (maida)

1/2 cup Oil

1/2 cup Brown Sugar

3 tbsp cocoa powder

1 tsp baking soda

2 eggs

Almonds for garnishing (optional)


METHOD:

Sieve all purpose flour, cocoa powder, baking soda and keep aside.

Peel and mash the bananas with the help of a hand mixer.

Add the oil and mix it well.

Then add the eggs and again mix them well.

Now add the sugar and mix till the sugar is combined completly.

Then put in the sieved flour, cocoa, baking soda and beat them gently into the banana mixture. Remember do not add the whole mixture in one go. Add small portions at a time. Mix well.

Preheat the oven to 200 degrees celsius. Spoon the mixture into the muffin moulds. Top it with some sliced almonds.

Bake it for 20 minutes. And your banana chocolate muffins are ready.

INGREDIENTS

9 slices Bread

SPREAD FOR THE BREAD

2 tbsp Olive Oil

1/4 tsp chilli flakes

1/4 tsp Oregano

1/4 tsp Black Pepper

1/4 tsp Chaat Masala




FILLING

1/4 cup sprouted Moong (boiled)

1/4 cup Pomegranate Seeds

1/2 Onion (finely chopped)

1 tbsp Coriander (finely chopped)

1/4 cup Cumcumber (finely chopped)

2 tbsp Imli Chutney Or Tomato Ketchup

1 tsp Lemon Juice




METHOD

Keep the bread on the rolling board (chakla). With the help of a rolling pin (belan), press applying pressure and roll out the bread thinly.

Prepare the spread for the bread by mixing all the seasonings in olive oil. 

Take a big size katori and cut out a round from the bread. Apply the spread on the bread with a brush.

Take a muffin tray, place the bread rounds in them to make a tokri with folds.

Place them on high rack and grill for about 10 minutes ot rill evenly browned on the edges. 

Make the filling by mixing all the ingredients.

To serve, put some filling in each tokri and dot with tomato ketchup.

Soya Cutlets - Tea Time Snack Rich In Proteins, Vitamins And Minerals

INGREDIENTS:


1 cup Soya Chunks

2 Onions (finely chopped)

3 Potatoes (boiled and mashed)

1/2 tsp Ginger (finely chopped)

1/2 tsp Garlic (finely chopped)

5 to 6 Curry Leaves (finely chopped)

1 tbsp Coriander (finely chopped)

1 tsp Corainder powder

1 tsp Garam Masala powder

1/4 tsp Turmeric powder

1/2 tsp Pepper powder

1/2 tsp Chilli powder

Oil for shallow frying

Salt to Taste




METHOD

Soak soya chunks in  3 to 4 cups of boiling water. Turn off the gas and cover it with the lid for 15 to 20 minutes. Stir at regular intervals to make sure that the soya chunks are soaked well and has absorbed water.

Drain, squeeze out excess water and mince in a mixie.

Heat 2 tbsp of oil in a pan and saute ginger, garlic, onions, green chillies and curry leaves till the color turns to light brown.

Then add salt, turmeric, coriander and chilli powders. Saute and mix well.

Add the minced soya chunks and mix well.

Sprinkle some water, cover it with a lid and let it cook on low flame for anaother 5 minutes.

Add the boiled potatoes, garam masala, pepper powder, coriander and mix well.

Let it cool for some time.

Take small portions and give them a shape of cutlets and shallow fry till golden brown.

Serve hot with tomato sauce.

Easy And Healthy Snack Recipe Of  Vegetable Gold Coin
Vegetable Gold Coin

INGREDIENTS:

1 loaf bread

300 gms boiled and mashed potatoes

100 gms carrot (finely chopped and boiled)

200 gms cabbage finely chopped (finely chopped and boiled)

100 gms french beans (finely chopped and boiled)

200 gms green peas (boiled)

100 gms capsicum (finely chopped and boiled)

1 spring onion (finely chopped)

1/2 cup coriander (finely chopped)

1/2 cup grated coconut

2 tbsp chilli sauce

1 tbsp ginger garlic paste

1 cup cornflour

Oil for frying

Salt to taste



METHOD:

With the help of round bread cutter, cut the bread slices in a circular shape and keep them aside.

Take 2 tbsp of oil in a pan. Add ginger garlic paste to it. After the paste changes its color into a beautiful golden shade add the chopped and boiled vegetables except the potatoes. Saute them for 2 mins.

Then add the mashed potatoes, chilli sauce, salt, spring onion, coriander and grated coconut. Mix them all well.

Now in another bowl make a mixture of cornflour, water and a pinch of salt.

Take the bread slice, apply butter on one of its side followed by the vegetable filling. Then top it with another bread slice.

Press it gently with your fingers and then dip it in the mixture of cornflour and finally deep fry.

Serve it hot with tomato sauce.
