A very different way of making brinjal is what you would be viewing in my today’s recipe -  Brinjal in garlic sauce. Its more of a Chinese dish prepared with soya sauce and the other ingredients like msg.

The brinjal pieces are stir fried first and then added into the garlic sauce. For making them crisp we have to coat it with cornflour before stir frying them. Also we would pierce the brinjal pieces add sprinkle some salt and white pepper on it, so that the brinjal pieces would absorb it and not remain flavorless from inside.

Now for the sauce, we need tomato puree and also the tomato sauce. While adding sugar, do not go over with it, because it would make the dish more sweet.

Ingredients:

½ kg Brinjals

1 tbsp Cornflour

1 ½ tsp White pepper powder

Salt

Oil for stir frying

Spring Onions for Garnishing

For Garlic Sauce

8 to 10 Garlic cloves (finely chopped)

¼ cup Tomato Puree

2 tbsp Tomato sauce

1 tbsp White Pepper

1 tsp Red Chilli flakes

1 ½  tbsp Soya Sauce

1 cup Water

Cornflour Mix- 1 ½  tbsp Cornflour in ¼ cup water

¼ tsp MSG

¼ tsp Sugar

Salt

2 tbsp Oil

Method

Cut the brinjals lengthwise into 4 pieces each.

With the help of a fork pierce the brinjals.

Sprinkle salt, white pepper and cornflour.

Mix well.

Heat oil in a pan and add the brinjals.

Stir fry till golden brown.

For the sauce heat oil in a pan and add the chopped garlic.

Saute till golden brown.

Put in the tomato puree, followed by tomato sauce. Mix well.

Next add the soya sauce and mix well.

Add water, stir and mix well and bring it to boil.

Then add in the cornflour paste by stirring continuously.

When the sauce thickens add in the stir fried brinjal pieces.

Mix well. Then put in the msg and sugar and mix well.

Let it simmer for a couple of minutes.

Garnish it with spring onions and serve hot.

Tips:

Do not add more sugar as it would make the dish very sweet.

You can adjust the consistency of the sauce by adding more water.

Add more red chilli flakes to make it more spicy.



Brinjal in garlic sauce can be best teamed with rice. You can also serve it with noodles or bread.

Baingan also known as an Eggplant or Brinjal is a very known veggie amongst the weight watchers. It has a very low calorie value yet highly nutritious. Apart from weight loss it is also good for ones heart. Another important benefit of Brinjal is that its good for your skin. 

So, according to me brinjal should be added in our regular diet in any form for atleast once or twice weekly. And the most common recipe of brinjal is the bharta made from roasted brinjals. The most peculiar element about this recipe is its smoky flavour and taste which can be obtained only by roasting the baingan on an open fire and not in the microwave. So lets move on to the recipe starting with its ingredients and then the method:

INGREDIENTS:

2 medium sized Brinjal 

3 Onions (finely chopped)

2 Tomatoes (finely chopped)

3 Green chillies (finely chopped)

1/4 cup Green Peas (boiled)

1/2 tsp Jeera (Cumin Seeds)

1/2 tsp Red Chilli powder

1/2 tsp Coriander powder

1/2 tsp Garam Masala powder

Coriander for garnishing

3 Tbsp Oil

Salt to taste



METHOD:

Wash the brinjals and pat dry them. Then apply some oil on them evenly.

Roast them on an open fire as you won't get the smoky flavour in the oven or microwave.

Roast them till they are tender and evenly cooked.

Let them cool and peel its skin.

Then mash the baingan and keep it aside.

In a pan heat oil and add jeera followed by onions.

Stir fry the onions till golden brown and then put the tomatoes and green chillies.

Mix them well and cook for another 3 minutes.

Add the salt, red chilli powder, coriander powder and garam masala powder.

Mix them all well and cook for a minute.

Now add the mashed brinjals and green peas, mix and cook for a couple of minutes.

Garnish with coriander and serve hot with rotis or naan or even bread goes well with baingan ka bharta.
