Kanda pakoda Punjabi style / Punjabi onion pakoda recipe / kanda pakoda step by step images / onion pakoda recipe video

Onion pakoda or kanda pakoda is a deep fried snack with onion as the main ingredient is mixed with some Punjabi spices and then mixed with gram flour to make the perfect batter which in turn would yield a ideal evening snack

The onion pakodas or kanda pakodas can be made in different ways. The recipe is the one which I am having since my childhood. A typical Punjabi recipe with the Punjabi spices.

Spices can be adjusted as per your taste. Check and adjust them before frying. These kanda pakodas or the onion pakodas are crispier than the other pakoda varieties. These really tastes good with a cup of strong hot tea.


Ingredients:

2 medium Onions (sliced)

½ cup Gram Flour

1 Green Chilli (finely chopped)

½ tsp Red chilli powder

½ tsp Garam masala powder

½ tsp Dry Mango powder

Salt

1/8  cup Water or as required

Oil for frying

Method:

Take a mixing bowl.

In a mixing bowl add 2 sliced onions, ½ cup Gram Flour, 1 Green Chilli (finely chopped), ½ tsp Red chilli powder, ½ tsp Garam masala powder, ½ tsp Dry Mango powder, salt.

Let it rest for about 10 minutes so that the onions would release water and then you can add water accordingly. In the meanwhile also keep the oil to get heated.

Add water in parts and form a thick batter. For me 1/8 th cup was enough, add as required.

By this time oil would be hot. So add small portions of the onion batter in oil. Do not over crowd them.

Deep fry on medium heat.

Flip at regular intervals. Fry them till they turn golden and crispy.

Drain on kitchen tissue.

Serve hot with green chutney and a cup of hot tea.

Tips:

Fry on medium heat for even cooking.

This recipe is medium spicy you can add more green chillies and red chilli powder as per your taste.

Papad also known as poppadam is a very thin and is in the form of a disc. When hot it becomes soft and hence can be given any shape. And today we are giving it a cone shape. These cones would be further used as containers in which we can fill the stuffing of our choice. These papad cones can be made for get together, birthday parties as it is a kids delight.

For making the cones you need to be really quick. As soon as the papad is roasted you would have to give it a cone shape, as once it cools down it won’t be achievable. Keep a kitchen towel or tissue handy to hold it while making a cone as it would be very hot to handle.

The stuffing can be made as per your choice and taste. I have used the potato stuffing mixed in with some spices and chutneys. To give it a crunch I have also used a farsan and then finally topped with nylon sev.

I have used medium sized papads and the measurements of ingredients given were sufficient for making 12 cones.

Once the papad cones are stuffed serve it immediately or else the papad would become moist and soggy.




Ingredients: (12 cones)

6 Papads (medium sized)


For Stuffing:

2 Potatoes (boiled and chopped)

¼ cup Moong (soaked and boiled)

1 Onion (finely chopped)

1 Tomato (finely chopped)

3 Green Chillies (finely chopped)

A fistful of Coriander (finely chopped)

1 tbsp Chaat Masala powder

2 tbsp Tamarind and Jaggery Chutney

1 tbsp Mint Chutney

¼ cup Farsan

¼ cup Nylon Sev

Salt

Method:

Cur the papads into half. Lightly roast the papad from both the sides on low to medium flame. Press it gently with a cloth to roast the papad evenly.

Transfer it to a kitchen tissue.

Give it a cone shape. The tip of the cone should be made at the side from where the papad is cut that is the straight line.

Hold it for few seconds till the papad attains the cone shape.

 Keep the cones aside.

Now for the stuffing take all the ingredients mentioned in a bowl and mix well.

Fill it in the papad cones and top it with nylon sev.

Tips:

Corns, cheese, capsicum can also be added in the stuffing.

Do not overload the stuffing with chutneys as it would make the papad turn moist very soon.

Roast the papad on low to medium heat.

Lightly roast the papad we do not want them to turn brown.

Serve immediately, as the stuffing is a bit moist the papad cones would become soggy soon.

I usually am not a big fan of Fritters, but these schezwan fritters are my favorite. My muma used to make it for me for my tiffin, that too in the early morning. By this you would get an idea that these fritters are easy to make and less time consuming. The main is the chopping part that takes some time, rest is just mixing and frying.

For these schezwan fritters you would need some chopped veggies like cabbage, capsicum, carrots. You can even use French beans, but boiled. For binding you would require a mix of cornflour and plain flour. So that the veggies would be intact and the fritters retain the desired shape.

To make it more crisp coat these fritters with cornflour and plain flour mixture.

I most important point I would like to discuss here is the water content of the vegetables. The water would not let the veggies unite together and also would restrict the fritters from keeping hold of their shape.

For this we would add salt to the vegetables and keep it aside for about 15 minutes. After 15 minutes squeeze out all the water. And then proceed with the recipe.

Ingredients: (6 to 8 Fritters)

1 ½  cup Cabbage (finely shredded)

1 Onion (finely chopped)

1 small Capsicum (finely chopped)

1 Carrot (grated)

½ tsp White Pepper powder

1 tsp Red Chilli Flakes

1 tbsp Schezwan Sauce

2 tbsp Plain Flour (maida)

5 tbsp Cornflour

Oil for frying

Salt to taste

Method:

In a bowl take cabbage, carrot, capsicum, onion, add salt and mix well. Let it rest for about 15 minutes.

Then add white pepper powder, red chilli flakes, schezwan sauce, plain flour, cornflour. 


Combine them well.

Take small portions and give them oval shape.

Make a mixture of 1 tbsp cornflour, 1 tbsp plain flour with water.

Dip the schezwan oval balls in this mixture.

Slide them into hot oil.

Deep fry them on medium to high flame till golden and crisp.

Drain on an absorbent paper.

Serve hot with tomato ketchup.

Tips:

After adding salt check it and adjust, do not add it later after squeezing out the water as it would increase the moisture.

The recipe is medium spicy you can add in more schezwan sauce and chilli flakes to make it more spicy

So, today I have made some Pinwheel Sandwiches which are bright, colorful and a perfect turn on for all sandwich lovers. Not only in looks it is a ten on ten but also the ingredients used are healthy and of very low calorie content. For this sandwich I have used carrots and cucumber, the healthy additions you can make to your diet. Its not only for adults, even children will love it. One can also pack it for tiffins as well. Let us now have a look at the very easy to make pinwheel sandwich recipe.

INGREDIENTS:

6 slices Bread (sandwich bread)

2 tbsp Butter

2 tbsp Tomato Ketchup

2 tbsp Mint Chutney

1 Cucumber (grated and squeezed)

1 Carrot (grated and squeezed)

Salt, Black Pepper to taste


METHOD

Remove the crust of the bread from the sides. Roll each slice bread with a rolling pin.

Then take one piece of bread and apply butter on it evenly. Then apply tomato ketchup and then grated carrots on top of it. 
Sprinkle some salt and black pepper.

On top of it place another bread with butter. Then cover it with mint chutney followed by grated cucumber. Press it gently with fingers.

Now, start rolling these bread slices and form a roll. 
Cover this roll in foil or butter paper and keep it in the fridge for 5 minutes to set. Likewise make rolls using all the bread slices.

Don't keep it for long to set as the bread will become moist. Cut each roll into two pieces.

Enjoy it with tea for breakfast or as a snack in the evening or even can be packed for tiffins.
