Gobi Aloo Matar - Make It Dhaba Style

INGREDIENTS:

1/2 kg Gobi (Cauliflower) cut into medium sized florets

2 medium sized potatoes (cut them as the size of cauliflower florets)

1/4 cup Green peas

2 small onions (finely chopped)

1 Tomato (finely chopped)

1/2 tsp Ginger (finely chopped)

1/2 tsp Garlic (finely chopped)

1/2 tsp Turmeric Powder

1/2 tsp Garam Masala powder

1/4 tsp Coriander powder

Coriander leaves for garnishing

1/2 tsp Jeera

Salt to taste

3 tbsp Mustard Oil (Sarson Oil)




METHOD

Heat oil in a pan till smokey.

Then add jeera to it. As soon as the jeera turns light brown put onions followed by ginger and garlic to it.

Stir it well till the onions, ginger and garlic turns golden in color.

Once the above mixture changes its color then its time to add turmeric powder.

Let it cook for a minute then add the tomatoes.

Cook the tomatoes until soft and then add the red chilli powder and coriander powder.

Mix it well.

Now add the gobi florets, potatoes and green peas.

(If you are using frozen green peas, then add them at the end.)

Mix them well and stir fry on high flame for a couple of minutes.

Then lower the flame and cover the pan with a lid.

Let it cook for another 10 minutes or till completly done.

Now add the garam masala and chopped coriander leaves.


Mix it well and serve it hot with rotis or naan or puris and mint chutney.

Tendli is a very common vegetable for Maharashtrians. In Hindi it is called Tindora and in english Ivy Gourd.

Tendli Masala - With Punjabi Tadka

INGREDIENTS:

1/2 kg Tendli

2 small onions (finely chopped)

1 Tomato (finely chopped)

1/2 tsp Ginger (finely chopped)

1/2 tsp Garlic (finely chopped)

1/2 tsp Turmeric Powder

1/2 tsp Garam Masala powder

1/4 tsp Coriander powder

Coriander leaves for garnishing

1/2 tsp Jeera

Salt to taste

3 tbsp Mustard Oil (Sarson Oil)



METHOD:

Wash the Tendlis and cut them length wise into 4 pieces each.

Heat oil in a cooker till smokey.

Then add jeera to it. As soon as the jeera turns light brown put onions followed by ginger and garlic to it.

Stir it well till the onions, ginger and garlic turns golden in color.

Once the above mixture changes its color then its time to add turmeric powder.

Let it cook for a minute then add the tomatoes.

Cook the tomatoes until soft and then add the red chilli powder and coriander powder.

Mix it well.

Now add the Tendli pieces and mix well.

Cover the cooker and put the whistle on.

Then on medium flame let it cook for two whistles.

Turn off the flame.

Let it rest for 5 minutes or till the air is completly out from the cooker and the cover can be opened.

Then add garam masala and chopped coriander to it and mix it well.




Serve hot with rotis accompained with dahi and salad.

INGREDIENTS:

1 cup Maida

1/2 tsp Turmeric powder

1/2 tsp Red Chilli powder

1/2 tsp Ajwain

1/2 tsp Jeera

1 tbsp Oil

Water

Salt to taste



METHOD

In a bowl mix flour, turmeric powder, red chilli powder, ajwain, jeera, salt, oil and mix well.

Then add water and knead it to a firm dough.

Let it rest for 2 hours.




Take a small portion and roll it into a roti as thin as possible.

Cut into diamonds with the help of a knife or a pizza cutter.

Deep fry these pieces until light golden and crisp.

Serve them with hot tea.

INGREDIENTS:

1 tbsp Ghee

1/2 kg Paneer

Cocoa powder (as per your taste)

1/4 cup powdered Sugar

1/4 cup desiccated Coconut


METHOD

In a pan heat ghee. Then add paneer to it.

Let it cook on medium flame for 4 to 5 minutes.

Turn off the gas.




Add cocoa powder,sugar, desiccated coconut and mix well.

Spread a bit of ghee on your palms, take small portions and shape into ladoos.

Roll each ladoo in desiccated coconut.

Refrigerate it for a few hours before serving.

Lettuce Potato Salad - A Very Healthy And Easy Recipe 

INGREDIENTS:

1 Lettuce (leaves wash and keep them in chilled water)

1 Tomato (finely sliced) 

1 Cucumber (finely sliced)

1 Potato ( boiled and cut it into square pieces)

Pinch of Cumin powder

1/2 tsp Red Chilli Powder

1/2 tbsp tomato sauce 

Roasted Cashewnuts for garnishing


FOR DRESSING:

2 tbsp Extra Virgin Olive Oil

Salt to taste

Black pepper as required

1 tbsp Lemon Juice

1 tbsp Brown Sugar

1 1/2 tbsp Roasted Peanut Powder

Whisk all the ingredients and refrigerate




METHOD:

In a pan saute the boiled potatoes in a tbsp of olive oil for a few minutes. Add salt and a pinch of cumin powder. Mix it well.

Remove from the heat and cool.

In a bowl add cucumber, tomatoes, onions, sauteed potatoes.Tear the washed and drained lettuce leaves and add to it. Mix all with the wooden fork.

Pour the salad dressing over it and toss well.

Garnish with roasted cashewnuts, tomato sauce and red chilli powder.

Chill for a while and serve.

Lettuce Garlic Croutons Salad - A Refreshing Salad Recipe

INGREDIENTS

1 Lettuce (leaves wash and place in ice cold water)

1 Green Bell Pepper (finely sliced)

1 Tomato (deseed and finely sliced)

1 Cucumber (finely sliced)

1 1/2 cup Garlic Croutons

2 tbsp roasted Peanuts

Pomegranate seeds for garnishing


FOR DRESSING:

1/2 tbsp Vinegar

2 tbsp Extra Virgin Olive Oil

1/2 tsp Black Pepper

1 pinch of Cinnamon Powder

1 Pinch Roasted Cumin Powder

1 tsp Castor Sugar

Whisk all the ingredients for a few seconds and refrigerate until use.


METHOD

In a bowl add cucumber, bell pepper, tomatoes.

Then tear the washed and drained lettuce leaves and add it to the bowl.

Toss all the ingredients. 

Cover with plastic wrap and refrigerate it until use.

Just before serving, add the garlic croutons and roasted peanuts.

Finally, once again whisk the dressing and add it to the salad. Toss it well.

Garnish with some pomegranate seeds and serve.

INGREDIENTS:

1 cup Bread cubes

2 tbsp Butter

1/2 tsp Garlic (grated)



METHOD

Preheat the oven at 350 degrees.

In a pan, melt butter over medium heat.

Stir in garlic and cook for a minute.

Add bread cubes and toss to coat.

Spread on baking sheet.

Bake for 15 minutes or until brown and crisp.

Check frequently to avoid burning.

The perfect crunchy croutons are ready to be used with any salad or soups.
