A perfect snack made of soya chunks or granules with boiled and mashed potatoes mixed with some veggies and spices and then shallow fried to get that crispy feeling outside and soft inside and is temptingly mouth-watering when served with green chutney or tomato ketchup

This again is my mom’s recipe. I have been having this and veg cutlet since childhood. Muma also used to give it to me in my tiffin as it serves a great tiffin snack.

Now this recipe unlike veg cutlet calls for adding rice flour for binding. You just have to add some rice flour to the mixture and its all set for frying. If you feel that the mixture is still loose add in some more rice flour. However for me the said quantity was enough.

Some of the tips include cooling down the boiled potatoes before using as the hot ones have more moisture, hence you would have to add more rice flour for binding. Also the soya granules should be drained well before use.

Ingredients:

2 mediun potatoes (boiled and peeled)

1/4 cup Soya Granules (soaked and drained)

¼ cup Green peas (boiled)

½  Carrot (chopped and boiled)

1 small Onion (finely chopped)

2 tbsp Coriander (chopped)

1 Green Chilli (finely chopped)

1 tsp Sugar

1 tbsp Lemon juice

1 tsp Garam Masala powder

½ tsp Red Chilli powder

2 tbsp Rice flour

2 tbsp Cornflour

Oil for frying

Method:

Take a mixing bowl.

In it add the above ingredients except oil and cornflour.

Mash and combine. If you feel that the mixture is still loose add in some more rice flour. However for me the said quantity was enough. This is the time when you can check and adjust salt and spices.

Grease your hands with oil.

Take a small portion of mixture and give it a round shape. Flatten a bit.

Prepare a mixture of cornflour and water.

Dip and coat the cutlets in the cornflour mixture and slide the cutlets into hot oil.

Do not overcrowd the pan. Fry on low heat and not on high heat to avoid burning.

Drain on a kitchen tissue to remove excess oil.

Serve them hot with green mint chutney or coriander chutney. Also you can pack them for kids in their tiffin.

Tips:

Cool down the boiled potatoes before using as the hot ones have more moisture, hence you would have to add more rice flour for binding.

Vegetable cutlet recipe / how to make veg cutlet / vegetable cutlet step by step images / video recipe


A perfect snack made of boiled and mashed potatoes mixed with some veggies and spices and then deep fried to get that crispy feeling outside and soft inside and is temptingly mouth-watering when served with green chutney.

Now this recipe does not call for adding any corn flour or all purpose flour for binding. You just have to add some fresh bread crumbs to the mixture and its all set for frying. If you feel that the mixture is still loose add in some more bread crumbs. However for me the said quantity was enough.

Also there is no need for coating. So it’s a very simple and easy recipe.

Take a heart shaped mould and grease it with oil.

Take a small portion of mixture and fill the mould with the mixture.

Press it gently.

De mould it to get the heart shaped cutlet. However you can use any shape of mould as per your liking. Or even you can give it a round or oval shape with your hands.

Slide the cutlets into hot oil. Do not overcrowd the pan. Fry on medium heat and not on high heat to avoid burning.

Papad also known as poppadam is a very thin and is in the form of a disc. When hot it becomes soft and hence can be given any shape. And today we are giving it a cone shape. These cones would be further used as containers in which we can fill the stuffing of our choice. These papad cones can be made for get together, birthday parties as it is a kids delight.

For making the cones you need to be really quick. As soon as the papad is roasted you would have to give it a cone shape, as once it cools down it won’t be achievable. Keep a kitchen towel or tissue handy to hold it while making a cone as it would be very hot to handle.

The stuffing can be made as per your choice and taste. I have used the potato stuffing mixed in with some spices and chutneys. To give it a crunch I have also used a farsan and then finally topped with nylon sev.

I have used medium sized papads and the measurements of ingredients given were sufficient for making 12 cones.

Once the papad cones are stuffed serve it immediately or else the papad would become moist and soggy.




Ingredients: (12 cones)

6 Papads (medium sized)


For Stuffing:

2 Potatoes (boiled and chopped)

¼ cup Moong (soaked and boiled)

1 Onion (finely chopped)

1 Tomato (finely chopped)

3 Green Chillies (finely chopped)

A fistful of Coriander (finely chopped)

1 tbsp Chaat Masala powder

2 tbsp Tamarind and Jaggery Chutney

1 tbsp Mint Chutney

¼ cup Farsan

¼ cup Nylon Sev

Salt

Method:

Cur the papads into half. Lightly roast the papad from both the sides on low to medium flame. Press it gently with a cloth to roast the papad evenly.

Transfer it to a kitchen tissue.

Give it a cone shape. The tip of the cone should be made at the side from where the papad is cut that is the straight line.

Hold it for few seconds till the papad attains the cone shape.

 Keep the cones aside.

Now for the stuffing take all the ingredients mentioned in a bowl and mix well.

Fill it in the papad cones and top it with nylon sev.

Tips:

Corns, cheese, capsicum can also be added in the stuffing.

Do not overload the stuffing with chutneys as it would make the papad turn moist very soon.

Roast the papad on low to medium heat.

Lightly roast the papad we do not want them to turn brown.

Serve immediately, as the stuffing is a bit moist the papad cones would become soggy soon.

Bread Rolls are an instant and a very easy tea time snack, which can be made in a jiffy. In fact, it is not only a tea time snack, but can also be packed in the tiffin for kids.

In my blog, you will find the recipes made from simple ingredients which are very easily available. And the same goes with these bread rolls as well.

I have used potatoes and green peas for the stuffing. Potatoes are cooked on low to medium flame with spices and then boiled green peas are added to it.

Ingredients: (6 Bread Rolls)

6 Bread slices 

2 large Potatoes (chopped)

2 Green Chillies (finely chopped)

1 tsp Cumin (jeera)

1 tsp Turmeric powder

1 tsp Punjabi Garam Masala powder

1/2 tsp Red Chilli powder

2 tbsp Coriander (chopped)

Salt

2 tbsp Oil

1 cup Water

Oil for Frying


Method:

Heat 2 tbsp Oil in a pan. Add cumin (jeera) to it. When cumin (jeera) starts to release its aroma add in the turmeric powder and mix well.

Now add the chopped potatoes and mix well.

Then green chillies and salt and again give it a mix.

Cook covered for 15 min or until cooked on low flame. Keep on stirring ocassionally.

Then add the green peas followed by punjabi garam masala, red chilli powder and coriander.

Mix well and cook it for another couple of minutes, so that the spices would be completely incorporated in the potatoes. Here our stuffing is ready. Keep it aside.

Now let us begin with the making of bread rolls. We need to fill this stuffing.

Take the bread slices and cut off and remove the sides of the bread. 

Then take one slice, dip it in water and press it gently in between your palms to remove the water. You need to press it gently or else the bread would break into pieces.

Now, place the potato and green peas stuffing on the bread, seal the edges and form a roll. There should be no gap left, else while frying the roll would open up.

Heat the oil to medium and put in the rolls.

Fry the bread rolls to golden brown in color.

Place the bread rolls on the kitchen tissue, so that the excess oil would be soaked by the tissue.

Serve it hot with green chutney, sauce or any dip of your choice.

Tips:

Use fresh bread, else the bread would break into pieces when dipped in water.

Fry it in medium hot oil, if the oil is not hot the bread rolls would open up, and, if the oil is too hot the bread rolls would turn dark brown superficially and would remain unevenly cooked.

This recipe would give you medium spicy bread rolls, add in more green chillies and red chilli powder to make it more spicy.

Use garam masala from the market if punjabi garam masala is not available
