Paneer Chocolate Ladoos - The Right Way To Make Ladoos.

INGREDIENTS:

1 tbsp Ghee

1/2 kg Paneer

Cocoa powder (as per your taste)

1/4 cup powdered Sugar

1/4 cup desiccated Coconut


METHOD

In a pan heat ghee. Then add paneer to it.

Let it cook on medium flame for 4 to 5 minutes.

Turn off the gas.




Add cocoa powder,sugar, desiccated coconut and mix well.

Spread a bit of ghee on your palms, take small portions and shape into ladoos.

Roll each ladoo in desiccated coconut.

Refrigerate it for a few hours before serving.

Lettuce Potato Salad - A Very Healthy And Easy Recipe 

INGREDIENTS:

1 Lettuce (leaves wash and keep them in chilled water)

1 Tomato (finely sliced) 

1 Cucumber (finely sliced)

1 Potato ( boiled and cut it into square pieces)

Pinch of Cumin powder

1/2 tsp Red Chilli Powder

1/2 tbsp tomato sauce 

Roasted Cashewnuts for garnishing


FOR DRESSING:

2 tbsp Extra Virgin Olive Oil

Salt to taste

Black pepper as required

1 tbsp Lemon Juice

1 tbsp Brown Sugar

1 1/2 tbsp Roasted Peanut Powder

Whisk all the ingredients and refrigerate




METHOD:

In a pan saute the boiled potatoes in a tbsp of olive oil for a few minutes. Add salt and a pinch of cumin powder. Mix it well.

Remove from the heat and cool.

In a bowl add cucumber, tomatoes, onions, sauteed potatoes.Tear the washed and drained lettuce leaves and add to it. Mix all with the wooden fork.

Pour the salad dressing over it and toss well.

Garnish with roasted cashewnuts, tomato sauce and red chilli powder.

Chill for a while and serve.

Lettuce Garlic Croutons Salad - A Refreshing Salad Recipe

INGREDIENTS

1 Lettuce (leaves wash and place in ice cold water)

1 Green Bell Pepper (finely sliced)

1 Tomato (deseed and finely sliced)

1 Cucumber (finely sliced)

1 1/2 cup Garlic Croutons

2 tbsp roasted Peanuts

Pomegranate seeds for garnishing


FOR DRESSING:

1/2 tbsp Vinegar

2 tbsp Extra Virgin Olive Oil

1/2 tsp Black Pepper

1 pinch of Cinnamon Powder

1 Pinch Roasted Cumin Powder

1 tsp Castor Sugar

Whisk all the ingredients for a few seconds and refrigerate until use.


METHOD

In a bowl add cucumber, bell pepper, tomatoes.

Then tear the washed and drained lettuce leaves and add it to the bowl.

Toss all the ingredients. 

Cover with plastic wrap and refrigerate it until use.

Just before serving, add the garlic croutons and roasted peanuts.

Finally, once again whisk the dressing and add it to the salad. Toss it well.

Garnish with some pomegranate seeds and serve.

INGREDIENTS:

1 cup Bread cubes

2 tbsp Butter

1/2 tsp Garlic (grated)



METHOD

Preheat the oven at 350 degrees.

In a pan, melt butter over medium heat.

Stir in garlic and cook for a minute.

Add bread cubes and toss to coat.

Spread on baking sheet.

Bake for 15 minutes or until brown and crisp.

Check frequently to avoid burning.

The perfect crunchy croutons are ready to be used with any salad or soups.

INGREDIENTS

9 slices Bread

SPREAD FOR THE BREAD

2 tbsp Olive Oil

1/4 tsp chilli flakes

1/4 tsp Oregano

1/4 tsp Black Pepper

1/4 tsp Chaat Masala




FILLING

1/4 cup sprouted Moong (boiled)

1/4 cup Pomegranate Seeds

1/2 Onion (finely chopped)

1 tbsp Coriander (finely chopped)

1/4 cup Cumcumber (finely chopped)

2 tbsp Imli Chutney Or Tomato Ketchup

1 tsp Lemon Juice




METHOD

Keep the bread on the rolling board (chakla). With the help of a rolling pin (belan), press applying pressure and roll out the bread thinly.

Prepare the spread for the bread by mixing all the seasonings in olive oil. 

Take a big size katori and cut out a round from the bread. Apply the spread on the bread with a brush.

Take a muffin tray, place the bread rounds in them to make a tokri with folds.

Place them on high rack and grill for about 10 minutes ot rill evenly browned on the edges. 

Make the filling by mixing all the ingredients.

To serve, put some filling in each tokri and dot with tomato ketchup.

Soya Cutlets - Tea Time Snack Rich In Proteins, Vitamins And Minerals

INGREDIENTS:


1 cup Soya Chunks

2 Onions (finely chopped)

3 Potatoes (boiled and mashed)

1/2 tsp Ginger (finely chopped)

1/2 tsp Garlic (finely chopped)

5 to 6 Curry Leaves (finely chopped)

1 tbsp Coriander (finely chopped)

1 tsp Corainder powder

1 tsp Garam Masala powder

1/4 tsp Turmeric powder

1/2 tsp Pepper powder

1/2 tsp Chilli powder

Oil for shallow frying

Salt to Taste




METHOD

Soak soya chunks in  3 to 4 cups of boiling water. Turn off the gas and cover it with the lid for 15 to 20 minutes. Stir at regular intervals to make sure that the soya chunks are soaked well and has absorbed water.

Drain, squeeze out excess water and mince in a mixie.

Heat 2 tbsp of oil in a pan and saute ginger, garlic, onions, green chillies and curry leaves till the color turns to light brown.

Then add salt, turmeric, coriander and chilli powders. Saute and mix well.

Add the minced soya chunks and mix well.

Sprinkle some water, cover it with a lid and let it cook on low flame for anaother 5 minutes.

Add the boiled potatoes, garam masala, pepper powder, coriander and mix well.

Let it cool for some time.

Take small portions and give them a shape of cutlets and shallow fry till golden brown.

Serve hot with tomato sauce.

Methi Malai Matar - Rich In Vitamins, Minerals And Calcium



INGREDIENTS:

2 tbsp Oil

1/2 tsp Ginger paste

1/2 tsp Garlic paste

1/2 cup Onion (finely chopped)

1 tsp Green Chilles (crushed)

4 tbsp Kaju

Salt to taste

1/2 tsp Garam Masala

1/2 tsp red chilli powder

1 1/2 cup Milk

1/2 tbsp Sugar

1 cup Methi Leaves

2 tbsp Kasturi Methi

1/2 cup Boiled Green Peas

1/2 cup Fresh Malai

2 tbsp Fresh Malai (garnish)




METHOD:

Heat oil in a pan and add onion, ginger, garlic and green chillies. Stir them till the onions change its color to golden brown.

Then add the fresh chopped methi leaves and cook it for about 10 to 15 minutes on medium flame.

After methi leaves, add kaju powder, salt, garam masala, red chilli powder, kasturi methi to it and mix well for a minute.

Next add milk and sugar stirring continuously.

Then add the fresh cream, boiled green peas. 

Mix it, give it a single boil and turn off the gas.

Remove it in a serving dish and garnish with malai.




Serve hot with tandori roti or nan.
