Eating healthy is the formula to healthy life. We should always try to incorporate such foods in our diet which are healthy and provide nourishment to our body. One such food which is healthy and can be easily included in our daily meals are the soya products. Soya products are highly rich in protein.

My today's recipe includes soya granules as the main ingredient. It is Soya Peas Cream. You would find all of my recipes are very easy to make and includes simple ingredients which are easily available. Same goes with Soya Peas Cream. 

I have seasoned the soya granules with some dry spices along with onions and tomatoes. Also there is the extra flavor of chopped ginger and garlic which adds to the aroma and also enhances the taste. To give the dish a varied color look, I have added some green peas. And finally for the richness, all it calls for some fresh yummy cream.. Wowww..the dsecription itself is so yummm....

Ingredients: (Serves 2)

1/2 cup Soya Granules

1/4 cup Green Peas (boiled)

1 Onion (chopped)

1 Tomato (chopped)

2 Green Chillies (chopped)

1 tsp Turmeric powder

1 tsp Red Chilli powder

1 tsp Cumin Seeds

1 tsp Coriander powder

2 tbsp Fresh Cream

2 tbsp Oil

1/4 cup Water

Salt

Coriander leaves (chopped) for garnishing


Method:

Firstly, take the soya granules and soak them in water for about 10 to 15 minutes. Add some salt in the water. When they become completely soft, drain the water and remove the excess water from the granules by pressing them with your hands.

Heat oil in a pan and add cumin seeds (jeera) to it.

When cumin seeds (jeera) turns aromatic add the chopped onion and ginger garlic.

Mix well and saute till it turns light golden in color.

Then add in the chopped tomato, green chillies.

Mix well and cook for 2 minutes.

Add turmeric powder, red chilli powder, coriander powder, salt, mix well and cook for a minute

Add in the water. It is to add some moisture to the dish as by this time the masalas are all dry. 



Cook for a minute.

Now its time to add in the protein rich soya granules and the green peas. Let this also cook for a couple of minutes.

To give this dish a rich touch add in the fresh cream and simmer for a minute.

Finally garnish it with chopped coriander.

Serve hot with rotis, nan or even bread.

Tips:

Add in some more water for making gravy.

Potatoes can also be added. After the tomatoes are cooked add in the potatoes and cook them on medium to low flame and once the potatoes are cooked then add the soya granules.

Methi Paratha or the Fenugreek Flatbread is not from the group of stuffed parathas. The methi leaves (fenugreek leaves) are chopped and kneaded in the dough.

It is very simple and easy to make yet delicious. It goes well with plain curd or even tea. But yes, do not forget to top it up with the home made white butter. Any paratha remains incomplete without the home made white butter.

I also added in some chopped onions to give it an extra flavor and taste. These Methi Parathas (fenugreek flatbread) can also be packed for the tiffins as they stay soft for long.

Ingredients:

1 cup Fenugreek Leaves (methi leaves) chopped

1 cup Wheat Flour

1 cup Onions chopped

2 Green Chillies chopped

1 tsp Red Chilli powder

1 tsp Garam Masala powder

1/2 cup Water or as required

Salt

Method:

Firstly clean the fenugreek leaves (methi) with water and drain the water. Chop the fenugreek (methi) leaves.

In a bowl, take the chopped fenugreek (methi) leaves and add the wheat flour, followed by the chopped onion, green chillies, red chilli powder, garam masala powder and salt.

Mix it well.

Then knead it into a dough by adding water in parts.

Let it rest for 15 minutes.




Place a tawa / pan on the gas or induction whatever you would be using, so that by the time we roll the paratha, the tawa / pan would be hot.

Take a small portion of the dough.

Apply some flour and flatten it. Then roll it into a circle and apply ghee.

Fold the opposite sides to overlap.

Then fold the remaining other two sides to form a square.

Dust some flour and roll it maintaining the square shape.

Place it on the hot tawa(pan).

Flip afer a minute or when the bubbles arise and apply ghee.

Fry till both the sides are evenly cooked and turn nice light brown.

Stir fry means to cook the food on high heat by stirring constantly. My today's recipe deals with the same. Its Potato and Peanuts Stir Fry.  Its a very simple dish and easy to make. You can also call it a one pot dish.

The potatoes, I have sliced them thin, if you cut them thick it would take long to get cooked. And as you are stir frying them, the high heat would burn the masala by the time the thick sliced potatoes would cook. You have to keep on stirring constantly else the veggies would stick to the pan and hence get burnt. 

I have roasted the peanuts as it adds the crunch to the dish and also enhances the flavor. Do not powder them completely, crush them coarsely to get the crunchy taste. You can do this manually or in a grinder its up to you. I have done it manually over the chopping board with the rolling pin.

Ingredients:

2 Potatoes (thin slices)

1/4 cup Peanuts (roasted and coarsely crushed)

2 Green Chillies (sliced)

1 Tomato (chopped)

1 tbsp Ginger Garlic paste

1 tsp Turmeric powder

1/2 tsp Red Chilli powder

1 tsp Cumin (jeera)

2 tbsp Oil

Salt

Coriander for garnishing

Method:

Heat oil in a pan and add cumin (jeera) to it.

When cumin (jeera) turns aromatic add the chopped onion and ginger garlic paste to it. Mix well and saute till it turns light golden in color.

Then add in the chopped tomato, mix well and cook till soft.

Add turmeric powder, red chilli powder, salt, mix well and cook for a minute

After adding the dry spices now its time to add our main ingredient potato. 




So add in the potatoes followed by sliced green chillies and stir fry until cooked.

Now its time to add in some crunch. Add in the roasted and coarsely crushed peanuts. Mix well and let it cook for a minute.

Finally garnish it with coriander.

Serve it hot with any bread of your choice. Even puris go well with it. Mix it with rice, would also taste good.

Tips:

The potato slices should not be thick, else it would take long to cook. If very thin, they would break and ruin the entire look of the dish. So they should be appropriate.

Keep on stirring constantly.

Mooli Paratha or we call it in english as Radish Flatbread is a very
famous stuffed paratha from North India, Punjab. It is also a very common breakfast made in almost all the punjabi families. Mooli Paratha is also from the family of stuffed parathas like Aloo Paratha, Gobi Paratha, paneer paratha and so on.

As radish is high in water content, some first fry it and get its juice dried, mix it with the spices and then stuff it in the parathas.

Some like me, I squeeze out the juice from the grated radish, mix in the spices and then proceed towards the stuffing. If the juice is not squeezed out, rolling the paranthas would be very difficult as the parathas would tend to break because of the moisture.

Always remember do not add salt along with the spices in the grated radish. It has to be added once the stuffing is placed on the paratha to be made, that is just before rolling the paratha. Now this is done because as soon as the salt comes in contact with the radish it would again become moist.

Second very important note is to apply oil on your hands before squeezing out the raddish juice. This would prevent any kind of irritation or itching. I always apply mustard oil.

Cook on low to medium heat. Ensure that both the sides are cooked evenly, should be cooked till brown.

Ingredients: (6 Parathas)

1 cup Wheat Flour

3/4 cup Water

2 Radish (peeled and grated)

2 Green Chillies (finely chopped)

1 tsp Carom seeds (ajwain)

1/2 tsp Red Chilli powder

1 tsp Garam Masala powder

1 tsp Ginger (grated)

Salt

2 tbsp Coriander (finely chopped)

Ghee for frying

Method:

Mix wheat flour with water and knead the dough. Cover it with a moist cloth and let it rest for 15 minutes.


Peel and grate the radish. Squeeze out juice of the raddish by pressing it with your hands. This juice can be used for kneading the dough.

Add in green chillies, carom seeds, red chilli powder, garam masala powder, ginger, coriander and mix well.

Place a tawa / pan on the gas or induction whatever you would be using, so that by the time we roll the paratha, the tawa / pan would be hot.

Take a small portion of the dough (about the size of a lemon), flatten it in between your palms and roll out into a circle. Keep it aside.

Make another circle in the same manner and place the radish stuffing on it.

Now, cover it with the first circle and press it gently.

Dust some flour and flip it. Dust flour on the other side and roll out into a bigger circle now. Remember when you cover do not roll on the same side, flip and roll.
Its my personal experience, if u flip and roll both the dough circles would be rolled evenly.

Tips:

Cook it on low to medium heat, it would evenly cook and paratha and make it crispy at the same time.

Apply oil on your hands while squeezing out the juice to avoid irritation and itching.

Do not add salt in the stuffing mixture, it would make it moist and hence parathas would break while rolling. Instead sprinkle it on the stuffing after its placed on the paratha.

The squeezed out juice from radish can be used for kneading the dough
