Use hung curd or greek curd. The vegetables I have used are
onion, tomato, and capsicum. I like to keep it simple so added these three and
green capsicum being my favorite. However, veggies can be added as per your
choice and taste.

Ingredients: (Serves 2)
4 slices Bread
½ cup Hung Curd
1 small Tomato (finely chopped)
1 small Onion (finally chopped)
½ Capsicum (finally chopped)
3 Garlic cloves (finely chopped)
1 tsp Red Chilli flakes
1 tbsp Mixed herbs
¼ tsp Black Pepper powder
Salt
1 tbsp Olive Oil
Method:
Take a mixing bowl.
Add ½ cup hung curd, 1 small Tomato (finely
chopped), 1 small Onion (finally chopped), ½ Capsicum (finally chopped), 3
Garlic cloves (finely chopped),1 tsp Red Chilli flakes, 1 tbsp Mixed herbs, ¼ tsp Black
Pepper powder.

Mix well and keep it aside.

Heat a pan. Brush olive oil on the bread slice and place it
on the pan.

When the bread turns brown at the lower side apply olive oil
on the other side and flip the bread.

Flip and toast till the bread slices turn nice golden and
crisp on both the sides.

Now add salt in the curd mixture and mix it well.

Spread this curd mixture on the slice of bread and cover it
with the other slice.

Cut the sandwich into two triangles.

Serve right away.

Tips:
Use fresh curd made from full fat milk.
Veggies can be added as per your taste and choice.
To make it more spicy add in some chopped green chillies.
